"Beru Whitesun Lars", by Meg Cabot, comes through the eyes of Aunt Beru. This story has a different feel, as it is actually Beru's retrospective after her death, so it has no impact on the timeline. It takes place pretty much as the "last story" ends, which is Obi-Wan communing with Qui-Gon at the sandcrawler after Luke has run off.

WARNING: This is a plot summary of the short story, spoilers ahead:
Beru gives us a kind of auto-obituary. Not sure how she pulls this off, as I would doubt she became one with The Force. Nevertheless...
Beru explains that Luke's arrival was both a blessing and a curse. She was certainly having her troubles with that cranky Owen. After it was clear they could not have children, she considered leaving Owen and opening a blue-milk cheese shop in Anchorhead, but after that Jedi showed up with the baby, her outlook changed. Even though she was well aware of the dangers of taking in the son of the man who had taken part in destroying so much of the Galaxy, she knew that Luke was destined to do great things.
Beru decides that even though she and Owen met their premature demises thanks to the business end of Stormtrooper blasters, her only regret was that Luke had to find them like he did. She is aware that it was all worth it because it triggered Luke to leave the planet, meet that princess, destroy the Death Star, and save the galaxy.
