R7-Z0 was never seen on screen or in any source other than being named in The New Essential Guide to Droids book.  The R7-series of astromechs was manufactured 10 years after the Battle of Yavin, which, of course, currently makes them all non-canon.  They were rushed into service to support the newly built E-Wing starfighters, but otherwise don’t work well with other starfighter types.  They can withstand a direct hit by a class one ion cannon, and can hold 15 sets of hyperspace coordinates in memory.  So apparently they could be considered the Tom Brady of crop dusters.

As a notable an exception to the above, there was a droid in The Clone Wars designated as R7-A7.  The Story Group confirmed that this was an advanced prototype astromech, but was not specifically meant to be an R7-series droid (which came out many decades later).  It was simply named “R7”, but was actually an advanced R2-unit.  Proper R7 units are indicated by their triangular “eye”.

This just has to be in any conversation regarding the most arcane Star Wars action figure made by Hasbro.  Literally the only source is an image in a reference book meant as an example of the R7 astromech model line.  R7-Z0 is not seen on screen, nor is it mentioned in any novel, comic book, card game, video game, or vacuum cleaner instruction manual.  In fact, it’s very existence as an action figure doubled the number of sources for this character.

What you need to build R7-Z0:

BD8 Darth Vader
BD7 Bane Malar
BD5 Ak-Rev
BD6 Yarna d’al Gargan
