It could be argued that Theron Nett is the most significant Yavin pilot that has not yet been made as a figure.  Theron flew as Red 10 and participated in Red Leader’s unsuccessful trench run.  While trying to cover Red Leader’s tail, he was shot from behind by one of Darth Vader’s wingmen.  In an editing oddity, when Nett is shot down a different pilot, Puck Naeco, is shown on fire.  I’m sure there is an in-universe explanation for this, but the fighter being targeted was clearly Nett’s. 
Participating Red Squadron pilots have been pretty well represented in the Star Wars line.  Though the briefing and hangar scenes show many pilots, not that many are actually seen in their cockpits during the battle.  Theron Nett has several lines and quite a bit of screen time.  He died, but so did everyone else.  Except that one guy.
His helmet is kind of nifty too and may have appeared briefly in Rogue One.  Basically of the all unmade pilots, Theron Nett is the highest priority. Get on that.
